A local Craft Butcher Shop in Tipperary town is the National Champion for the Association of Craft Butchers National Sausage Competition.

Tom and Gerard Ryan, who operate O’Malley’s Butchers on Bridge Street are the national Champions after an intense competition held in the Curragh last month(January 26th).  The store emerged as overall winner of the Sausage Competition and now displays the Perpetual Trophy for the coming year and a replica that the store can retain.

Ryan’s Mastercraft Butchers has four full time staff and operates 6 days a week but trades as O’Malleys – the former owners, who produce the beef and lamb for the store. Pork is supplied by a producer in Bansha as the business strongly supports the excellent local food produce.

In addition, Walsh Butchers in Cashel. were selected as Best in Munster for their Rib Eye steak in the Competition which is judged by Chef Paul Curry, and food Journalists Dee Laffan and Leslie Williams.
