Crunchy Rhubarb & Raspberry Pie Recipe Wed 1st June from Nora Samworth on Afternoon Delight. 4ozs Butter melted ,4ozs Rolled Oats and 4 ozs Digestive of Ginger Biscuits coarsley crushed Pinch of cinnamon 1lb Rhubarb cut into1" lengths and 6ozs Raspberries 6ozs Demerara Sugar. 2ozs Nuts (optional) Preheat oven 180c or gas mark4. Mix together butter ,oats,and crushed biscuits nuts, cinnamon and half of the sugar. Place fruit and remaining sugar in another bowl and mix well. Place half of the fruit in the bottom of a 2pt (1.1) litre greased ovenproof dish and sprinkle with half mixture (crushed biscuits etc ) repeat layers with fruit and biscuit mixture. Bake in preheated oven 30 to 40 mins. Delicious hot or cold with cream or ice cream
